Castel del Monte Aglianico Bocca di Lupo is produced on the Tormaresca estate, owned by the Marchesi Antinori and located in the municipality of Minervino Murge, in Puglia. It is made exclusively from Aglianico grapes, harvested slightly overripe to enhance their phenolic potential. After crushing, the grapes ferment in stainless steel tanks at a controlled temperature of 25-27°C. Maceration lasts 15-18 days, with frequent pump-overs and gentle délestages to ensure gradual and balanced extraction. The wine is then placed in oak barriques, mainly French, for malolactic fermentation, for 15 months. Once bottled, it is aged for another 24 months before being released onto the market.
Tasting notes:
It is a dark ruby red wine. The nose reveals a complex and prolonged succession of aromas: spicy, menthol, toasted, with notes of ink and nuances of jam, dried plums and cherries in spirits. On the palate it is soft and balanced, with a great structure. Overall, it is a very elegant wine, with a pleasant persistence.
Pairings:
Perfect to accompany cured meats and aged cheeses, it is ideal with savory pasta dishes based on meat ragù and roasts.
