A pure Sauvignon Blanc whose first vintage dates back to 1956, it comes from the most suitable vineyards in Alto Adige, from a manual harvest with a rigorous and careful selection of grapes. After arriving in the cellar, there is a delicate whole cluster pressing and racking for natural sedimentation. Later, a slow fermentation is carried out at a controlled temperature in stainless steel tanks, followed by aging for 5-7 months on fine lees, partly in stainless steel barrels (80%) and for the remaining part in large wooden barrels. Blending is done one month before bottling.
It presents a beautiful straw-yellow color in the glass, with greenish reflections, opening on the nose with a colorful bouquet where fruity notes of ripe apricot, mandarin, and passion fruit stand out, harmoniously blending with notes of elderflower, nettle, and mint. On the palate, the pleasantly fruity taste is confirmed, enhanced by a distinct freshness. A wine that stands out for its good structure and its complex bouquet.
A wine that pairs best with boiled white asparagus with Bolzanina sauce, to match a local dish, as well as nettle dumplings, also from South Tyrol. Also try it with tuna carpaccio, smoked salmon, and raw scampi.
