Sangiovese Rubicone IGT S-Cett is a wine made from 100% Sangiovese grapes, perfect for everyday occasions. In its authenticity and genuineness, it perfectly embodies the relationship between the winemakers and the terroir of Mercato Saraceno, in Emilia Romagna, where agriculture is still an integral part of human activity, as is a glass of wine during a meal or an aperitif, especially in good company. In its normal everyday life, it is an intriguingly drinkable and continuous wine, made nimble by its sharp acidity. It is produced starting from mid-September, when the grapes are harvested and brought to the winery. Here they are destemmed and pressed, before being sent for spontaneous alcoholic fermentation on indigenous yeasts in steel tanks with maceration on the skins. Once fermentation is complete, the grapes undergo soft pressing and the resulting wine is bottled.
Tasting notes:
Sangiovese Rubicone IGT S-Cett is a ruby red wine that opens in the glass with strong aromas of crisp red fruit, such as black cherry and small red forest fruits, then turns to the floral notes of violet and light green pepper spice. The palate is more than fresh, with a persistence integrated by the sharp acidity that makes the drink nimble but dynamic.
Pairing:
Ideal with cured meats or grilled red and white meats, it pairs excellently with traditional Emilian first courses, especially dishes based on Bolognese ragù.
