Philipponnat's Champagne Royale Réserve Brut is made from Pinot Noir, Chardonnay, and Pinot Meunier grapes, sourced from the finest Premier Cru and Grand Cru vineyards in the heart of Champagne, with a strong prevalence of Pinot Noir from the Mareuil-sur-Aÿ area, which largely characterizes it.
This cuvée, obtained exclusively from the first pressing, is completed with 25-35% reserve wines that are exceptionally aged in wooden barrels and managed using the Solera method, gaining complexity. The aging, which takes place entirely in the fresh cellars of the Maison, extends for a full 3 years on its lees, much longer than the 15 months required by the Champagne regulations.
Intense golden in color, with a lively mousse and a fine, persistent perlage, it opens on the nose with hints of vine flowers and linden, supported subsequently by a light aroma of toasted bread that, upon opening, is enriched with fruity and honeyed scents. In the mouth, it is vinous and structured, with hints of redcurrant, raspberry, and ripe grapes, anticipating a broad and fragrant finish, characterized by a light biscuit note.
Ideal to serve chilled as an aperitif, it elegantly enhances white meats, cured meats, and fish dishes.
