The Winery, founded in Verzenay in 1776 by Francois Rousseaux, now run by Céline and Eric Rousseaux, produces approximately 38,000 bottles per year from 8 hectares in Verzenay, of which 90% is Pinot Noir and 10% Chardonnay. Verzenay is considered one of the most important Grand Cru villages of the Montagne de Reims. The northeast-facing exposure of the vineyards creates a microclimate that slows down grape ripening, favoring greater acidity and freshness. Fermentation in stainless steel and aging on lees for three years offer aromatic cleanliness and finesse perceptible both on the nose and palate.
Tasting notes: In the glass, it presents a bright golden color with fine and persistent perlage. The nose reveals hints of fresh biscuit, dried apricot, orange marmalade, and candied citron, with mineral notes. In the mouth, the freshness and chalky minerality combine with a silky texture and a balanced body. The finish is savory and long, with a sweet note of candied fruits.
Food pairings: It pairs well with fish dishes such as amberjack carpaccio and steamed crustaceans, and also goes well with spinach ravioli and butter.
