Production and Harvest:
average production 3 kg per plant – early harvest
in the third decade of August.
Vinification:
soft pressing of whole grapes, cold static
decantation, white vinification. Long Charmat method
secondary fermentation for a fine perlage.
Pairings:
for the whole meal, elegantly accompanying crustaceans, fish, and shellfish. Elegant as an aperitif.
