The Delavenne family is now in its 4th generation of récoltants-manipulants, and is currently led by Jean-Christophe Delavenne, the current vice-president of the general union of winegrowers. The total production of the estate is about 70,000 bottles/year of Champagne made exclusively from Pinot Noir and Chardonnay.
The winery does not carry out malolactic fermentation for any of its references. The vinification process involves the exclusive use of indigenous yeasts for alcoholic fermentation. The aging in tanks at cellar temperature is extended to 9 months, in order to obtain a product that is more respectful of the varietal, the characteristics of the harvest year, and greater maturity. For this reason, the winery bottles its champagnes in July (and not in February as is customary).
Tasting notes: Bright yellow color, very fine and persistent perlage, the nose opens with aromas of fruit, white flowers and dried fruit. On the palate, it is fine, fresh and persistent.
Pairings: To be enjoyed with pan-fried scallops, rich fish, pork, and soft sweet cheeses. Excellent as an aperitif but also throughout the meal.
