Cottanera's Etna Bianco comes from Carricante vineyards located in the Cottanera and Diciassettesalme districts of Castiglione di Sicilia, a pure expression of the magical territory of Etna. The harvest takes place manually in the last week of September. The must undergoes cold maceration for about 24 hours, then alcoholic fermentation begins, which takes place in stainless steel at a controlled temperature of 16°C for about 20-25 days. The wine thus obtained ages in stainless steel for about 6 months.
Tasting notes:
It presents itself in the glass with a straw yellow color. The nose overflows with citrus notes reminiscent of lemon and cedar, accompanied by elegant hints of orange blossoms and jasmine. The palate is full-bodied and enveloping, with a very long finish of rare freshness.
Pairings:
Perfect paired with raw fish and seafood, it is enhanced with a fried bluefish.
