Founded in 1959 by the Agrarian Reform Agency of Sardinia (supported by the area's main winemakers), Cantina di Castiadas collected grapes from all over Sarrabus, a sub-region of south-eastern Sardinia: an enchanting territory surrounded by dense Mediterranean scrub with immense stretches of white sandy beaches and a turquoise, crystalline sea. Known primarily for the production of Cannonau, Castiadas today, with a dynamic, prepared, and passionate team and a strong bond with its members and the territory, focuses entirely on the tradition of Sarrabese viticulture, and on the typicality and identity of its products. The wines of Castiadas embody the tradition, taste, and scent of a unique land, where sea and mountains coexist.
Saeprus is a very particular Metodo Classico, made from 100% Cannonau grapes vinified in white: a new venture for the winery, which enhances the characteristic of the grape variety whose acidity lends itself perfectly to sparkling wine production. Brief maceration, fermentation in steel tanks, double fermentation, and secondary fermentation in the bottle. Disgorgement with dosage syrup, no added sugar.
Tasting notes:
Luminous with a fine perlage, the nose expresses fine and elegant aromas: fruit, bread crust, Mediterranean scrub, and flowers; on the palate, it is fresh and fragrant, intense and full-bodied, with the savouriness perfectly balanced against the softness. A very elegant sparkling wine.
Pairings:
Perfect to pair with dishes of character, with a rich, oily texture, such as fried seafood. Excellent from appetizers to first courses, including those based on white meats.
