Cantina di Castiadas represents a benchmark in the viticulture of southeastern Sardinia, combining deep respect for the terroir with technological avant-garde. The predominantly cultivated grape varieties, Cannonau and Vermentino, find their ideal habitat in the region's Mediterranean climate, tempered by its proximity to the sea. Modern winemaking ensures the fidelity of varietal characteristics, highlighting the peculiarity of Castiadas' terroir, a blend of granitic sands and clays that gives the wines intensity and minerality.
Made from selected grapes vinified rosé, "Aster" undergoes a second fermentation in the bottle according to the Traditional Method, followed by an extended aging of 30 months on the lees, a choice that defines its structure, complexity, and expressive precision. The long period on the lees allows for the development of a fine and articulated texture, without ever making the sip heavy.
In the glass, it presents a luminous rosé hue, traversed by a very fine and persistent perlage. The bouquet is elegant and layered: notes of small red fruits emerge, delicate floral hints, and nuances of bread crust and yeast, a direct consequence of the long aging. On the palate, the wine is taut and harmonious, supported by a balanced freshness, a measured savoriness, and an enveloping structure that accompanies a long and coherent finish.
