The flagship of the winery, the Metodo Classico Rosé Brut is the result of Cà dei Frati's long experience in sparkling wine production. It is a blend of Groppello, Marzemino, Sangiovese, and Barbera, varieties that are part of the tradition of the area and, when harvested slightly early, surprise with their acidity and balance. A sparkling wine left to rest on its lees for about 24 months, it surprises in the glass with its substance and detail, length and structure.
Pale pink, with a rich mousse and fine perlage. The nose expresses notes of red fruits, rose petals, and clear mineral traces. On the palate, it is delicate and caressing, elegant, and persistent. It finishes with a pleasant saline note.
Also excellent as an aperitif, it pairs well with delicate fish dishes, medium-aged cheeses, and cured meats of all kinds.
