The Veronese Palazzo della Torre is one of the wines that has made Allegrini’s production famous worldwide. It is primarily made from Corvina Veronese grapes, along with Rondinella and Sangiovese grapes, all harvested and selected entirely by hand. Fermentation occurs separately in stainless steel at controlled temperatures of 25-29°C and 8-22°C, respectively, for durations of 10 and 15 days. After malolactic fermentation in barrique, the wine ages in second-passage French oak barriques for 15 months and then in bottle for another 7 months.
It presents a deep ruby red color. On the nose, it opens with intense aromas of black cherry, carob, and figs, enriched by elegant notes of coffee and nutmeg. On the palate, it is full-bodied, velvety, and harmonious, with a prevalence of ripe and pulpy fruity notes.
Perfect to accompany saffron risotto and porcini mushrooms, it is ideal with typical Italian pasta dishes such as Amatriciana and Carbonara, grilled meats, and roasts.
