Kyoto Miyako Distillery is the first distillery opened in Kyoto Prefecture, 50 km northwest of the city, in an unspoiled and sparsely populated area, but above all, crossed by the Yura River, known for the purity of its particularly fish-rich waters. The proximity to such a precious water source proves vital in all stages of whisky preparation.
Obtained from the careful blending of only different style malts produced at the Kyoto Miyako Distillery through the creative use of its two pot stills. The two pot stills are used differently from the classic Scottish style, where the stills divide the tasks of first and second distillation. Here they feature a completely different characteristic, an upward shape that prevents impurities and heavy oils from condensing, resulting in cleaner, more floral, and delicate spirits.
Tasting notes:
On the nose, it releases delicate brackish notes, medicinal cabinet, and a slight hint of smoke and campfire. It surprises on the palate with its delicacy, obtained from the skillful use of the "bulge" still and the characteristics of the distillation plants that tend to produce spirits free of impurities, oily components, and heavy parts, instead allowing the more fruity and floral notes to emerge.
