A pure Sauvignon Blanc that expresses all the exuberance of its land of origin, Alto Adige, in the glass. It comes from a rigorous selection of grapes and manual harvesting, as was done in the past. After arriving at the winery, there is a delicate whole-cluster pressing and natural sedimentation. This is followed by a slow fermentation at controlled temperature and aging for 9 months on fine lees, half in large wooden barrels and the remaining half in stainless steel tanks. The blending operation follows, performed 3 months before bottling.
Tasting notes:
A sparkling yellow color illuminates the glass, and the nose is immediately intoxicated by an exotic and captivating bouquet, with colorful notes of mango and papaya, lime and red grapefruit, which combine with herbaceous hints such as lemongrass, lemon balm, and green tea, to which notes of elderflower syrup and mineral undertones of flint intertwine. The palate is a play between mineral aromas and fruity notes, which harmoniously merge into a rich flavor that turns into a persistent aftertaste.
Pairings:
Due to its splendid organoleptic profile, it is the most suitable wine to pleasantly accompany oysters, salmon tartare, and raw shellfish. Definitely worth trying with steamed lobsters.
