Canorei is a toponym already present in ancient maps and for this reason, it has been elevated to the dignity of an Additional Geographic Mention. It is an exclusive "monopole cru" of Tenuta Carretta, as the vineyards of the mention fall entirely within the property, on soils typical of Roero: sandy and rich in limestone. The wine boasts the "riserva" mention and further highlights the potential of Arneis as a flagship grape variety and symbol of the territory. Vinification: in the cellar, the grapes undergo a soft pneumatic pressing and a subsequent cold maceration for 24 hours at a temperature of 10°C. Fermentation takes place at a low temperature (18-20°C) in stainless steel tanks, then the wine is aged for at least 12 months in tonneaux, keeping it on the fine lees to increase its aromatic complexity and fullness on the palate. Aging is then completed in the bottle for another 12 months.
Pairings: thanks to its structure, it can be enjoyed as an all-meal wine, from appetizers to risottos, white meats, and fresh or medium-aged cheeses.
