The Sauvignon "Animale Celeste" is the interpretation of this important international grape variety by the Santa Barbara winery, located in the municipality of the same name, in the province of Ancona.
The deep attention to vineyard work and respect for the soil allows for a taut and smooth-drinking Sauvignon Blanc "Animale Celeste".
Santa Barbara's Sauvignon is vinified in stainless steel tanks at controlled temperatures, followed by a 5-month aging period in the same manner.
"Animale Celeste" from the Santa Barbara winery can be considered a typical expression of Sauvignon Blanc, whose exuberant aromas recall those of the New World. In addition to the classic varietal notes, such as tomato leaf, the extraordinary bouquet is further enriched by the vitality and elegance of exotic fruits, like pineapple and papaya. The aromatic note reminiscent of sage and thyme completes this wonderful aromatic picture with the final brushstroke. The influence of the Adriatic Sea contributes a pleasant mineral-savory note that supports the typical freshness of Sauvignon and a softness that allows for magnetic drinkability.
This interpretation of Sauvignon "Animale Celeste" finds an ideal and tasty pairing with a Catalana seafood platter, and at the same time, it is interesting to pair it with a typical dish from Ancona cuisine, "fave 'ngreccia" (broad beans), which with their savory hint can stand up to the enveloping richness of Santa Barbara's Sauvignon.
