Its grapes come from vineyards located within the ancient walls of a monastery, with clay soils offering excellent drainage for Merlot and light, sandy soils for Cabernet Sauvignon and Carménère. The vines, aged between 15 and 40 years, grow at an altitude varying between 120 and 300 meters above sea level, exposed between South-West and North-West.\u003c\/p\u003e\n\u003cp\u003eFermentation occurs spontaneously in small concrete tanks, with a maceration period of 12-15 days and frequent pump-overs. After racking, the wine undergoes malolactic fermentation in the same tanks, where it remains in decantation for several months. Ageing continues for 18 months in medium-toasted French oak tonneaux, using first and second-use wood.
