It is born from the blend of Cabernet Sauvignon, Merlot, and Carménère, from vineyards located within the ancient walls of a monastery. The soils are light and sandy for Cabernet Sauvignon and Carménère, while Merlot grows on clay soils with excellent drainage. The vines, aged between 3 and 25 years, are located at an altitude between 120 and 300 meters above sea level, with South-West and North-West exposure.\u003c\/p\u003e\n\u003cp\u003eFermentation takes place spontaneously in small concrete tanks, with maceration for 12-15 days and frequent pump-overs. After devatting, the wine undergoes malolactic fermentation in the same tanks, where it remains for decantation for several months. Aging lasts 12 months, divided between concrete for 50% and second and third passage medium-toasted French oak barriques and tonneaux for the remaining 50%.
