It is made from 100% Sauvignon Blanc grapes, harvested exclusively by hand in September. Vinification takes place in white with pressing and destemming of the grapes, followed by a brief pre-fermentative cold maceration. The wine then ferments at a controlled temperature of 12°C for about 12 days and remains on its lees for 5 months, with frequent bâtonnage and cold stabilization, before being filtered and bottled.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTasting Notes:\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eIt is characterized by a straw yellow color with greenish reflections. The nose presents an aromatic bouquet with characteristic hints of white peach, green pepper, and a pleasant note of sage. On the palate, it is dry and pleasantly acidic.
