The Vigneti delle Dolomiti Vette di San Leonardo from Tenuta San Leonardo is produced in vineyards located in Vallagarina, in the southernmost part of Trentino. It is made from 100% Sauvignon Blanc grapes, harvested exclusively by hand in September. Vinification takes place in white with pressing and destemming of the grapes, followed by a brief pre-fermentative cold maceration. The wine then ferments at a controlled temperature of 12°C for about 12 days and remains on its lees for 5 months, with frequent bâtonnage and cold stabilization, before being filtered and bottled.
Tasting Notes:
It is characterized by a straw yellow color with greenish reflections. The nose presents an aromatic bouquet with characteristic hints of white peach, green pepper, and a pleasant note of sage. On the palate, it is dry and pleasantly acidic. Overall, it is a full-bodied and elegant wine.
Pairings:
Perfect for accompanying aperitifs and fish dishes, it is ideal with white meats, cured meats, and cheeses, both fresh and aged.
