Cervaro della Sala from Marchesi Antinori is produced in vineyards located in the areas surrounding Castello della Sala, in Umbria. The name comes from the noble family who owned the castle in the 14th century, the Monaldeschi della Cervara.
It is made primarily from Chardonnay grapes and Grechetto grapes, harvested at night and refrigerated to preserve their aromas before crushing and destemming. The two varieties ripen at different times and are fermented and aged in different ways. The Chardonnay is briefly cold-macerated for 4-6 hours, then fermented for 18 days in new French oak barriques, where it remains on its lees for 6 months. The Grechetto, on the other hand, ferments and ages in stainless steel. The wine is then blended and, once bottled, rests for 10 months in the historic cellars of Castello della Sala.
Tasting notes:
It has a bright straw-yellow color with greenish reflections. The nose opens with toasted notes and fruity nuances of citrus and exotic fruits, with slight buttery sensations. On the palate, it is savory and fresh, with a long and persistent finish. Pleasant right away, it has excellent aging potential.
Pairings:
Perfect for accompanying warm fish and vegetable appetizers, it is ideal with first courses with fish sauces, vegetables, and mushrooms. Also excellent with stewed fish, white meats, both grilled and stewed, and game.
