A special Blanc de Blancs Grand Cru produced by the Lallier house.
It is made with 60% Chardonnay grape parcels from Grand Cru certified villages of Aÿ and the remaining 40% from vineyards located in the villages of the Côtes des Blancs: Avize, Cramant, and Oger.
It rests on the lees (Lallier selection) for a period between 36 and 48 months, while disgorgement occurs only 4 months before release.
The result is a capital 'C' Champagne, with an intense and profound taste, fresh and mineral.

Tasting notes:
Golden yellow with greenish reflections. Intense and fine nose with pleasant citrus fruit notes on a fragrant background of freshly baked brioche. Delicate mineral notes of chalk alternate. In the mouth, the drink is full and balanced with a minerality that continues to enhance during its stay in the glass. The finish is long and extremely pleasant.
Appetizer:
To be tried as an aperitif with foie gras or caviar canapés. Excellent paired with raw fish dishes such as sushi or sashimi.
