The harvest begins in the second ten days of August and continues until the first week of September. The soft pressing of the grapes yields the must, of which only the so-called \"flower\" must, i.e., that resulting from the first pressing, will undergo fermentation. Secondary fermentation takes place in the bottle, followed by 24 months of aging on the lees, plus another 2 months after disgorgement.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTasting Notes:\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eIn the glass, it is a beautiful luminous yellow, adorned with a fine and persistent perlage.
