Enrico Serafino has been applying parcel vinification since the establishment of the Alta Langa DOCG. Parcellaire is obtained from the selection of parcels that best represent the typically "edgy" character of the denomination. The dosage, intentionally low in sugar, combined with the absence of distillates, eliminates any interference between the wine and its territory of origin. The grape bunches are hand-selected on a vibrating table and pressed in an inert environment (nitrogen) with a free-run must yield of 55%. The entire process takes place without the use of augers to treat the grapes as gently as possible. The must is fermented in temperature-controlled stainless steel tanks and kept for 6 months on the lees with bâtonnage.
The secondary fermentation is carried out according to the traditional method of bottle fermentation, with prolonged ageing on the lees until the wine reaches full maturity. The liqueur d’expédition added after disgorgement is prepared following a secret recipe that includes reserve wines and sugar (4.5 g/L). “We are proud to avoid any distillate in our final dosage”
Tasting notes: Fine and persistent perlage. The nose is complex, attractive, and pleasantly incisive, with floral notes, white-fleshed fruit, bread crust, and minerals. On the palate, it is vertical, vibrant, and richly structured. An edgy touch typical of the Alta Langa hills, tamed by the parcel blend.
Pairings: Excellent as a sophisticated aperitif, it pairs perfectly with fish dishes, shellfish, tartares, and delicate gourmet preparations.
