Alta Langa Rosé de Saignée “Oudeis”, produced by Enrico Serafino, is a vintage wine of great finesse, offering an intense and elegant rosé version, perfectly consistent with the characteristics of Pinot Noir. The Burgundian grape variety has adapted very well to Alta Langa and, when vinified as rosé, produces a Classic Method wine of absolute quality, fragrant, fresh, complex and persistent. The harvest takes place manually with a slight anticipation, in order to preserve the necessary freshness to create good sparkling wine bases. The grapes are gently pressed and the must is then vinified in white in stainless steel tanks at controlled temperature. After a short aging, the best vins clairs are blended to create the cuvée. The second fermentation takes place in the bottle according to the Classic Method, with a rest on the lees of at least 36 months before disgorgement.
Tasting notes: Broad and crisp on the nose with hints of strawberry, blackcurrant, wild flowers, cotton candy and bread crust. On the palate, fruity, multifaceted, dry, complex and elegant. A long and pleasant mineral aftertaste completes the character of this wine.
Pairings: Excellent as an aperitif, with fish and shellfish dishes. Perfect with ham and salmon-based dishes.
