The Company, founded in the 18th century in the municipality of Vertus by the Colin family and still run by its descendants, produces 90,000 bottles from 10 hectares in the municipality of Vertus and 4.5 hectares between Sézanne, Oiry and Cramant. The soil is predominantly silty-calcareous and gives the wine sapidity and exotic notes. All Colin champagnes are characterized by a finish that recalls orange zest. The company is HVE (Haute Valeur Environnementale) certified, meaning vines cultivated using the "sustainable" viticulture method, preferring organic and natural methods.
The company has been using a Reserve Perpetuelle system since 2004 as the base of its cuvées: reserve wines are added year after year with a play of proportions so that "old wines can educate young ones," to bring complexity and maturity to the champagnes and block their freshness.
Castille Rosé is made from Chardonnay grapes and red wine from Pinot Noir grapes, 40% of which are reserve wines from 2004. After vinification in steel tanks and wooden barrels, the sparkling process takes place according to the Champenoise method. The Champagne ages on lees for 18-30 months.
Tasting Notes: It is characterized by a rosé color and a fine and persistent perlage. The nose opens with aromas of raspberry and pomegranate, violet, and dark spices. On the palate, it is spicy and deep.
Pairings: Excellent with lamb chops, fresh goat cheeses, and fruit desserts.
