It is produced predominantly with Corvina Veronese grapes, along with Rondinella and Molinara grapes, entirely hand-harvested and selected in the first ten days of October. Fermentation takes place in stainless steel tanks at a controlled temperature of 25-31°C for about 9 days. Subsequently, the wine ages in stainless steel and for an additional 2 months in the bottle before being released onto the market.
Allegrini's Valpolicella Classico has a ruby red color with purplish hues. The nose opens with intense fruity aromas, especially cherry, enriched by fresh hints of pepper and aromatic herbs. On the palate, it is juicy and lively, but over time, it shifts towards a more delicate dimension.
Perfect for accompanying appetizers and soups, it is ideal with pasta dishes, roasted or grilled white meat, and as a summer red wine for fish-based dishes.
