It is mainly produced with Corvina grapes and Oseleta grapes, entirely hand-picked and selected in early October. Fermentation takes place in stainless steel tanks at a controlled temperature of 20-28°C for about 15 days. After malolactic fermentation in barriques, the wine ages for 16 months in second-fill French oak barriques and for an additional 10 months in the bottle.
It presents a compact ruby red color. The nose opens with intense aromas of redcurrant and plum, enriched by hints of vanilla, black pepper, and coffee. On the palate, it is elegant and harmonious, a wine of great refinement capable of evolving positively for over a decade.
Perfect for accompanying red meat dishes and roasts, it is ideal in combination with lamb, kid, stewed or grilled mushrooms, and aged non-spicy cheeses.
